Sandwich with Mexican Tofu Spread and Grilled Zucchini

Sandwich with Mexican Tofu Spread and Grilled Zucchini


Ingredients

  1. 1 zucchini
  2. as needed olive oil
  3. to taste sea salt
  4. To taste Mexican Tofu Spread
  5. 1 loaf bread
  6. To taste chilli flakes (optional) or chive (optional)

Method

  1. Preheat grill or frying pan to hot.
  2. Slice zucchini into thin circles. Brush one side of each strip with a little oil.
  3. Lay the zucchini slices, oil side down, on the hot surface. Cook for 2 minutes on each side until done. Sprinkle with sea salt.
  4. Slice the bread, spread Mexican Tofu Spread, and layer the zucchini on top.
  5. Add herbs if using, chilli flakes or chive.
  6. Top with other slice or leave open.
